Recipe Makeover: Hashbrown Casserole

 As I write this at noon in Nashville, we are awaiting the "snowpocalypse" of 2018. I don't know about you, but when I'm snowed in, nothing is better than a little comfort food. Something warm, creamy, starchy, and hearty always hits the spot. Potatoes are one of my favorite foods, and when they are in the form of the Southern-staple, Hashbrown Casserole, they're to die for. 

Meatless Monday Recipe:Greek-Style Quinoa Burgers

Happy meatless Monday everyone! I am definitely a meat eater, but I do enjoy making several of my meals meatless each week. It's a great way to consume more plant-based foods, plus it is quite budget-friendly! And one of my favorite meatless meals is a good veggie burger. But I think it is hard to find a store-bought one that is "meaty" enough AND holds together when you bite into it. So I discovered that it is not that hard to make my own.

Who can resist the crispy-on-the-outside, juicy-on-the-inside, flavorful entree that pairs perfectly with other traditional Southern dishes like greens and mashed potatoes? Homemade, made-from-scratch fried chicken is truly delicious, but it is also quite the undertaking. I've made homemade fried chicken, but just once, due to this lengthy process.

Nothing quite says comfort food like an ooey-gooey, warm grilled cheese sandwich. And while you can't go wrong with a classic American cheese version, one thing I love about recipe development is putting new spins on old favorites, so my perfect grilled cheese sandwich combines both sweet and savory flavors. Sweet from fresh, plump and juicy California grapes and local honey and savory from the creamy brie and tangy blue cheeses.

Two Must-Have Chili Recipes

The fall chill is finally in the air, which makes me crave hot and hearty meals. Nothing fits that bill better than a steaming pot of chili. In fact, October is National Chili month, so I teamed up with Bush's beans to create two new chili recipes inspired by different regions of the country.

Recipe: Garbanzo Bean, Chorizo, and Kale Soup

Although it is still just the beginning of September, there is already a chill in the air that hints of fall's coming. With the change of seasons comes football-filled weekends, colorful leaves falling in the breeze, and cravigns for soul-warming meals like soups, chilis, and casseroles. Personally, I not only love soups because they take the autumn chill off my bones, but also because they are a complete meal that comes together in one pot in a flash.

Recipe: THE BEST Roast Beef Melt

Sometimes nothing sounds better than a good sandwich. When built correctly, it can not only serve as a meal-in-one (whole grain bread = healthy carbs and fiber; lean meat = protein; lettuce, tomato, onion, mushrooms, etc. = veggies; spreads, cheese, etc. = fats). And let's be real--what is more comforting than enjoying flavorful, savory meat and ooey-gooey cheese melted on warm, soft bread?
