Slow Cooker Pulled Pork Tacos

The great thing about cooking meals in a slow cooker (or in an instapot if you're on trend) is that you can literally fix it and forget it. The best part is that when you get done with a long day, you have a hot, home cooked meal that's just waiting on you. And one of the best things to make in a slow cooker is pulled pork since cooking it low and slow is the best way to get that tender, juicy texture. That's why I created this recipe for my client Bush's Beans. It's Pulled Pork Tacos--shredded pork dripping with a spicy-sweet sauce stuffed into corn tortillas and perfectly paired with Bush's Honey-Chipotle Grillin' Beans. Try it out for yourself--I bet you'll think that it is worth the wait!

Pulled Pork Tacos:

Ingredients:

1 pound extra-lean pork tenderloin

1/2 teaspoon Southwest chipotle seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 onion, chopped

3/4 cup prepared red enchilada sauce

1/2 cup low sodium beef broth

1/2 cup barbecue sauce

2 tablespoons hot sauce

12 corn tortillas

1 cup shredded cabbage

1 can (21.5 ounces) Bush's Honey Chipotle Grillin' Beans

Directions:

Place pork tenderloin into the slow cooker. Sprinkle the chipotle seasoning, salt, and pepper directly onto the pork. Add onion, enchilada sauce, beef broth, barbecue sauce, and hot sauce. Cook on low for 8 hours. After cooking shred the pork with a fork. To serve, top corn tortillas with pork sauce from the slow cooker as well as some shredded cabbage. Serve with Bush's Honey Chipotle Grillin' Beans.
