Recipe: Honey Chipotle Meatballs

Memorial Day is right around the corner, and if you are looking for something fun and unique to serve at your picnic or cookout, I have just the thing! These Honey Chipotle Meatballs that I created for my client, Bush's Beans, are bite-sized flavor explosions that are a definite crowd-pleaser. Not only that, but they are also easy to make, and because I used both ground sirloin and (secret ingredients!) oats and Bush's Honey Chipotle Grillin' Beans, they are an excellent source of protein and fiber as well.

Recipe: Blackened Salmon

If you want to do something to better your overall health, eating more fish rich in omega-3 fatty acids is a great first step. Eating omega-3-rich fish like salmon, tuna, herring, lake trout, sardines, and mackerel 2-3 times per week can lower your risk for heart disease, age-related eye disease, and inflammation, while improving your brain health. The type of omega-3's in these fish are EPA and DHA, which are more bioavailable to the body than the ALA type found in some plant foods.

Recipe Makeover: Chicken and Black Bean Enchiladas

Any fans of Mexican food out there? Many people think of Mexican food as an unhealthy choice, but it can actually be a great vehicle for superfoods like beans, veggies, spices, and herbs. I've made over a traditional recipe for enchiladas, which is actually kind of boring when you think about it; just tortillas, meat, and cheese. In my recipe, I still keep those staple ingredients, but I also add onions, bell pepper, tomatoes, black beans, and plenty of flavorful spices and fresh herbs.
